REMOVING EXCESS COOKING OIL FROM CROUTONS USING AIR KNIFE In the final stages of manufacture, croutons are removed from the
fryer and passed along a vibrating conveyor to remove as much oil as
possible. This was only partially successful and led to customer complaints
because: Croutons are sold by weight and excess oil increases the weight
