DRYING SOUP CARTONS TO PREVENT ICE FORMATION USING AIR KNIFE

New Covent Garden Soup

Cartons of soup have to be cooled as quickly as possible after hot filling prior to entering a freezer.
Water jets are used to cool the product from 80°C to 10°C but this water then forms ice when it enters the freezer causing problems for the conveyor rollers

An air knife is placed over the top of the conveyor to remove most of the surface moisture from the cartons and conveyor just before entering the freezer.
